Cinco de Mayo

Last night we had Uncle Jay, Uncle Danny and Simon over for some Cinco de Mayo fun. Eres mucho bueno. I made Pioneer Woman's Simple Enchiladas and just cheese quesadillas for the kids.

I can't tell you how much I enjoyed cooking, helped to have a cold Corona and some lime nacho chips and salsa to snack on while I do so though.

It was nice to feed the kids first and then the 4 of us sit down for some chatting and dining.

Uncle Jay gets some play time in with the girls, they were so excited to see him. Lovely little mess, right?
