My kids favorite after school snack


The BEST Chocolate Chip Cookies 
 
I love this recipe and I love changing it up a bit each time. 

INGREDIENTS

  • 2 1/2 cups all-purpose flour
  • heaping tsp baking soda
  • 1/2 tsp sea salt
  • 8 Tbsp (1 stick) unsalted butter, at room temperature
  • cups packed light brown sugar
  • large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups chocolate chips

Directions 

  1. Set oven to 350°F. Line a baking sheet with parchment paper. 

  2. Place the flour, baking soda, and salt together in a medium bowl. Whisk together.
  3. Place the butter and sugar in a  large bowl.  Using a hand mixer, beat on medium-high speed until light and fluffy. Add the eggs one at a time and beat until blended. Add the vanilla and beat again until blended.
  4. Add the flour mixture a little at a time and mix on medium speed just until the flour is incorporated. I use a wooden spoon at this point and add the chocolate chips and stir until combined. 
  5. Drop the dough by large spoonfuls onto the prepared baking sheet. Bake until lightly browned on top, 10 to 11 minutes depending on the size of your cookie mounds. Cool on the pan for a couple minutes and then move cookies to a baking rack.  
  6. Buon Appetito! 
* I change this recipe up each time. Sometimes I add more or less vanilla and sometimes I'll vary the sugar using both white and brown sugar to equal to the 2 cups sugar. I also vary the type of chips I use from mini chocolate chips to semisweet chocolate chips to dark chocolate chips. AND sometimes I mix the chips up too adding mini chips with dark chocolate chips. Options are good in my book.

Olivia loves math!


 Our Olivia Maria just received a pretty special recognition through our school - this girl placed second in her grade for the Catholic Math League test! We are so proud of her! She was pretty proud of herself too.

Christmas Day in Maryland

After opening gifts at home and a delicious (if I say so myself) Christmas breakfast, we were off to Maryland to celebrate with my family. Zio Scotty and Zia Chaela surprised the kids with news of a puppy! Chicco was not pleased but everyone else was. 

Thankfully Chicco really liked his big Christmas gift.

And introducing Luna! Such a sweet puppy that will one day be a very large puppy, more of her to love! I think she likes Ya-Ya.



Always fun trying to get 7 grandkids and two grandparents in a photo, but regardless of whether everyone is looking or not, if everyone's hair looks good or even if outfits match, it's memories being made.

Chrismtas Eve


On Christmas Eve Eve this year, we made Reindeer Food which is so easy and fun to make. It's very fun for me to put together for the kids because it takes little planning and prep and I still love this about Christmas so much. Basically you just need some small baggies and string to tie and place whatever it is you think will guide the reindeer to your home. We typically put cereal, oats, sprinkles and some glitter for added sparkle. Toss around the yard before going to bed Christmas Eve! 

A  couple photos from Christmas Eve, tradition to go to mass and then to my in-laws for 7 fish dinner but this year we celebrated mass virtually ala 2020 and then headed to my in-laws for dinner and gifts.
