Ingredients:
- 1 3/4 c. all-purpose flour
- 3/4 c. sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/4 c. vegetable oil
- 3/4 c. milk
- 1 tsp vanilla extract
- 2 ripe bananas, mashed
- 3/4 cup chocolate chips
Directions:
- Pre-heat oven to 350 degrees. Line muffin pan with paper liners.
- In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
- In a smaller bowl, combine the egg, oil, milk and vanilla. Stir into dry ingredients until moistened. Fold in bananas and chocolate chips.
- Spoon into paper-lined muffin cups until two-thirds full. Bake for 22-25 minutes or until a toothpick comes out clean. Cool before removing from pans. Delicious!
