I love baking and especially during the holidays. Which I can now officially start saying "the holidays" until I'm blue in the face. You have been forewarned.
Ingredients:
- 1 cup all-purpose flour
- 2/3 cups whole wheat flour
- 1-1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 eggs
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 1/2 cup water
- 1/2 cup chocolate chips
Directions:
1. In a large bowl, combine the flours, sugar, baking soda, cinnamon, salt, baking powder, nutmeg and cloves. In a small bowl, whisk the eggs, pumpkin, oil, and water. Stir into dry ingredients just until moistened. Mix in chocolate chips.
2. Pour into a greased loaf pan. Bake at 350 for 65-70 minutes or until a toothpick goes in and comes out clean. Let it cool in the pan for about 10 minutes before removing to a wire rack.
