Zeppole di San Giuseppe

In honor of today being Italian Father's Day, below is a recipe common for many Italians on this day.

Zeppole di San Giuseppe
(St. Joseph's Day pastry)

Ingredients:

2/3 cup water
1/3 cup butter
2/3 cup flour
1/8 tsp salt
3 eggs


Directions:

1. Combine water and butter in a medium saucepan; bring to a boil.

2. Add flour and salt at once, stirring swiftly over medium high heat until mixture leaves sides of pan and forms a smooth ball.

3. Remove from heat and cook 4-5 minutes. Add eggs, one at a time, beating thoroughly after each addition; then beat until dough is smooth.

4. Drop cream puff pastry into 8 equal mounds 3 inches apart on an ungreased baking sheet. Bake at 400 degrees for 30 to 35 minutes or until golden brown. Allow to cool. Cut off top and spoon out soft dough. Fill with filling of your choice - pudding or ice cream are a favorite of mine.
